Pork tenderloin shawarma

Ingredients
- 1 pork tenderloin
- 4-6 tortillas
- Olive oil
- 2 green onions, sliced
- 1/4 bok choy, cut into thin strips
MARINADE
- 1-1/2 tsp roasted shawarma spice blend
- 2 cloves of garlic
- Juice of 1/4 lemon
- 1 bunch of fresh cilantro, chopped
- Sea salt and pepper
- 5 tbsp olive oil
MAYONNAISE
- Sambal oelek (to taste)
- Mayonnaise
Preparation
- Slice the pork tenderloin lengthwise without cutting all the way through. Leave approximately 1/4 inch so the meat doesn’t come apart.
- In a bowl, combine spices, garlic, lemon juice, cilantro, salt, pepper and oil. Stir well. Add meat and coat well. Marinate for 2 hours, if possible.
- In a small bowl, add mayonnaise and sambal oelek until desired spiciness is reached.
- Spread open the pork tenderloin and cook on preheated barbecue for approximately 4 minutes on each side, or until meat is pink. Remove the pork and cut into thin slices. Keep warm.
- In a skillet set over medium heat, roast tortillas on both sides. Remove the chips.
- Add sauce, meat, bok choy and green onions. Fold over and enjoy.
