Sœurs en Vrac’s Fruit, Nut and Spice Holiday Cake

Ingredients
Fruit Mix:
- 1 C (250 ml) pitted dates
- 1 C (250 ml) Sultana raisins
- 1 C (250 ml) currants
- 1/2 C (125 ml) dried mangoes
- 1/2 C (125 ml) dried apricots
- 1/2 C (125 mL) dried cranberries
- 1/2 C (125 ml) blanched almonds
- 3/4 C (190 ml) apple juice
Wet Mix:
- 1 C (250 ml) butter, melted
- 4 eggs
- 1 C (250 ml) unbleached white flour
- 2 tsp (60 ml) very strong black coffee, chilled
Dry Mix:
- 1 tsp baking powder
- 1/2 tsp salt
- 1 C (250 ml) whole pecans
- 1 ½ tsp cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 1/4 teaspoon freshly grated nutmeg
- 1 C (250 ml) unbleached white flour
Preparation
- The day before, chop the dried fruits and soak them with the blanched almonds overnight in the apple juice.
- The next day, drain the fruit and almonds; Sprinkle with a little flour (45 to 60 ml) and mix well. Reserve
- Preheat oven to 135°C (275°F).
