Peanut Butter Cookies

Ingredients
- 250 ml (1 cup) whole wheat flour
- 250 ml (1 cup) quick-cooking oats
- 125 ml (½ cup) brown sugar
- 10 ml (2 tsp) baking powder
- 5 ml (1 tsp) baking soda
- 2.5 ml (½ tsp) salt
- 2.5 ml (½ tsp) vanilla extract
- 125 ml (½ cup) neutral oil (avocado, canola, grapeseed, etc.)
- 125 ml (½ cup) unsweetened applesauce
- 60 ml (¼ cup) maple syrup or honey
- 125 ml (½ cup) crunchy peanut butter
Preparation
- Preheat oven to 350°F (175°C).
- Line a large baking sheet with parchment paper.
- Mix the dry ingredients together thoroughly.
- Mix the liquid ingredients together thoroughly.
- Combine the dry ingredients with the liquid ingredients and mix well.
- Drop about 1 tablespoon of the mixture onto the prepared baking sheet, shaping them into small ovals (quenelles) using two spoons.
- Space each cookie about 5 cm (2 inches) apart.
- Bake for approximately 15 minutes.
Note: For a variation, add 60 ml (¼ cup) of raisins to the mixture.
