Crispy Sole Fillets

Ingredients
- 450 g (1 lb) sole fillets
- 250 ml (1 cup) panko breadcrumbs
- 30 ml (2 tbsp.) fresh Parmesan cheese, grated
- 5 ml (1 tsp.) fennel seeds
- 5 ml (1 tsp.) ground black pepper
- 5 ml (1 tsp.) ground coriander
- 125 ml (½ cup) flour
- 2 eggs, beaten
- Lemon wedges, for serving
Preparation
- In a bowl, combine breadcrumbs, Parmesan and fennel seasoning.
- Place the flour on a plate and the beaten eggs in another bowl.
- Coat each sole fillet with flour, dip in egg mixture and cover with breadcrumbs.
- Heat oil or butter in a frying pan over medium heat. Brown the fish for 1 to 2 minutes on each side.
- Drizzle with juice from the lemon wedges just before serving, and serve with French fries and a green salad.
