Crispy Sole Fillets – Recipe by Marie-Claude Morin

Ingredients
· 450 g (1 lb) sole fillets
· 250 ml (1 cup) panko breadcrumbs
· 30 ml (2 tbsp.) fresh Parmesan cheese, grated
· 5 ml (1 tsp.) fennel seeds
· 5 ml (1 tsp.) ground black pepper
· 5 ml (1 tsp.) ground coriander
· 125 ml (½ cup) flour
· 2 eggs, beaten
· Lemon wedges, for serving
Preparation
1. In a bowl, combine breadcrumbs, Parmesan and fennel seasoning.
2. Place the flour on a plate and the beaten eggs in another bowl.
3. Coat each sole fillet with flour, dip in egg mixture and cover with breadcrumbs.
4. Heat oil or butter in a frying pan over medium heat. Brown the fish for 1 to 2 minutes on each side.
5. Drizzle with juice from the lemon wedges just before serving, and serve with French fries and a green salad.
