Butter chicken

Ingredients
- 1 cup coconut milk
- ¼ cup 15% cooking cream
- ½ cup plain yoghurt
- 1 tin (156 ml) tomato paste
- 2 tbsp of butter
- 1 finely chopped onion
- 2 tbsp of butter chicken seasoning
- 2 tsp of minced fresh ginger
- 2 cloves of minced garlic
- 2.2 lb of chicken cubes
- salt
- pepper
Suggestion: serve with rice and warm naan bread
Preparation
1. In a bowl mix the coconut milk, cooking cream, yoghurt, tomato paste and set aside.
2. In a frying pan, melt the butter and fry the onion.
3. Add the butter chicken seasoning, the ginger and the garlic. Cook for 1 minute, stirring constantly.
4. Add the chicken cubes and fry for about 2 minutes.
5. Add the liquid mixture, stir and simmer over low heat for 1 hour, stirring occasionally.
6. Add salt and pepper to taste and fresh coriander just before serving.
Serve with rice and warm naan bread.
