Butter chicken
- In a bowl, mix 1 cup coconut milk, ¼ cup 15% cooking cream, ½ cup plain yoghurt, 1 tin (156 ml) tomato paste and set aside.
- In a frying pan, melt 2 tbsp of butter and fry 1 finely chopped onion.
- Add 2 tbsp of seasoning, 2 tsp of minced fresh ginger and 2 cloves of minced garlic. Cook for 1 minute, stirring constantly.
- Add 2.2 lb of chicken cubes and fry for about 2 minutes.
- Add the liquid mixture, stir and simmer over low heat for 1 hour, stirring occasionally.
- Add salt and pepper to taste and fresh coriander just before serving.
Serve with rice and warm naan bread.
